The difference can be attributed to the quality of grass and to raising calves 24+ months which means the animals frame is solid and its energy is used to build fat (marble) into its beef which is what adds favor and tenderness.

John's Farm Half Beef Bundle is sold by processed weight, which means you pay for the beef that is going into your freezer. In comparison, other producers sell by live or hanging weight.
